- Plant a Salad Garden! Plant lettuce and whatever salad toppings you want, watch it grow, then have a salad harvest party and enjoy your delicious dish!
- Use your senses to explore lettuce—while it’s growing, or after it’s harvested.
- Students can research the history and origins of lettuce, then write an explanatory essay. Did you know the ancient Egyptians harvest lettuce seeds for oil instead of eating the leaves?
- Students can research iconic salads like Cobb, Waldorf, or Caesar. Who created them? When and where were they made? What goes into them? Students can even make their own salads and compare, then write an opinion piece about their favorite.
- Suppose in a bowl of salad, the ingredients were meeting each other for the first time? Students can write a dialog between a leaf of lettuce, a piece of carrot, a slice of tomato, a chunk of cucumber, and anything else they’d like in their salad. The ingredients can tell each other where they’re from, how they traveled to Georgia, and how people like to eat them in other parts of the world.
- Do a lettuce science project! Take some lettuce leaves and place them in two brown paper bags. Add an apple to one bag. Leave them at least 24 hours. What happens to the lettuce with and without an apple? Students can research fruit and vegetable ripening, make predictions before the experiment, and determine the best way to store leafy greens based on the results.
- Students can investigate the nutritional value of lettuce and other leafy greens. Make a comparison chart showing which types of leafy greens are the most nutritious.
